Baked Sweet Potatoes (how to bake the perfect sweet potato)
Tofurkey Sausage
Tomato Sauce
Lemon Juice
Soy Sauce
Tabasco Sauce
Horseradish
Pepper
Celery Salt
Skewers
Green Olives
Black Olives
Pickle Spears
Celery Sticks
Litelife Meatless Jerky
Beer Chaser

Instructions:

Slice Tofurkey sausages into discs and sauté in a skillet over medium heat until they are warmed thoroughly and browning on the edges.

When sweet potatoes are finished baking, remove from oven and let cool for a few minutes. Scoop most of the meat out of each sweet potato, making sure to leave the basic shape of each sweet potato in tact (you’ll re-stuff the sweet potato in a minute).

In a large mixing bowl, mix the sweet potato meat with tomato sauce, lemon juice, soy sauce, Tabasco sauce, horseradish and black pepper. Add ingredients in slowly and adjust to your taste. I like mine really acidic and spicy, so I added A LOT of the above. If you want to be more conservative, add just a few small spoonfuls of the bloody mary flavor per each sweet potato.

Return the bloody-married sweet potato meat to the hollowed-out sweet potato shells.

Assemble skewers: take your bloody mary fixins like green olives, pickles, jerky, etc. (whatever you prefer!) and layer on to the skewers. Place a skewer or two over each re-stuffed sweet potato. Serve alongside a beer chaser.
