Broccoli and Cheese Stuffed Sweet Potato

Cut head of broccoli into small florets. Place in a steaming basket in a pot of boiling water. Cover and let steam until broccoli florets turn bright green and tender, about 5 minutes.
When sweet potatoes are finished baking, carefully cut a seam the long way through each one. Gently pinch the ends of each sweet potato and push towards the center to open the sweet potato. Place a generous spoonful of the creamy vegan cheese sauce into each and lightly mix with the sweet potato meat.
Place a spoonful of steamed broccoli into each sweet potato. Slather with more sauce.
Top with crushed golden round crackers and chopped scallions. (And more sauce!)
