A fresh spin on the traditional entrée salad; this sweet potato stuffed with vegan cobb salad ingredients makes for an easy and satisfying meal.    Pin this post.

Ingredients:

4 Sweet Potatoes
Batch of Creamy Vegan Ranch Dressing
Batch of Coconut Bacon
2 Tbs. Olive Oil
2 Cups Sweet Corn
1 Avocado
2 Tomatoes
4 Leaves of Romaine Lettuce
½ Red Onion

Instructions:

Bake sweet potatoes at 425 for about an hour until soft. Let cool fully and then refrigerate for an hour. Make the meat-free coconut bacon. Make the dairy-free ranch dressing. Either of these can be made up to a week ahead of time. Roast the corn in a little olive oil until cooked and the skins start to turn black. Slice the avocado, tomato, romaine and red onion. Cut the a long seam into each sweet potato and pinch the edges towards the center to prep for stuffing. Line the salad ingredients in rows into the sweet potato. Serve with ranch dressing on the side.
