16 oz Fresh Green Beans
Fried Onions from the can
Pierce the sweet potatoes with a fork and bake on a foil-lined baking sheet at 475 degrees for about 50-75 minutes.
Meanwhile, bring a pot of water to a boil. Place the green beans into the pot. After about 2-3 minutes the beans should turn a bright green. Dump water and immediately place beans in an ice bath to halt cooking. This blanching process will ensure the beans are tender and crunchy.
Prepare the sage gravy.
When sweet potatoes are finished baking, cut a large seam into the long side of each and gently squeeze to open. Stuff each sweet potato with a large handful of green beans. Slather with gravy and sprinkle with fried onions.
