Pizza Stuffed Sweet Potatoes

Pizza Dough (I used Trader Joe’s)
1 16 oz can Tomato Sauce
Half Red Onion, Sliced
Half Green Pepper, Sliced
1 cup Black Olives, Sliceds
1 Tbs. Pizza Seasoning
Make the dough balls: Rip off chunks of pizza dough and mold into 1” balls. Bake for 10 minutes at 400 degrees, then pan fry in olive oil until crispy, about 5 minutes. (Bonus points: season olive oil with garlic powder, oregano and basil.)
Get the sauce going: Heat sauce in a saucepan on the stove over low heat. Add pizza seasoning and stir frequently.
Stir-fry the veggies: Sauté the sliced onions and green peppers in a little olive oil until they are tender and beginning to brown. Toss in sliced black olives and sauté for a couple more minutes.
Assemble the Pizza Stuffed Sweet Potatoes: When sweet potatoes are finished baking and cool enough to handle, cut a long seam into each one and scoop out about ⅔ of the sweet potato meat.
Mix the sweet potato meat, tomato sauce and pizza dip together until well incorporated. Adjust the proportions to your liking, making sure to reserve some sauce for dip for the dough balls.
Place the pizza-flavored sweet potato meat back into the sweet potato shells. Stuff with sautéed vegetables, an extra dollop of pizza dip and a spoonful of cashew cream. Serve alongside pizza dough balls.
