This quick pickled radish recipe is a great side dish or garnish to serve over grains, salads or with crackers.

Quick Pickled Radishes Make An Easy Garnish:

Pickling doesn’t need to be a long, involved process. These quick pickled radishes are a great way to extend your farmer’s market or garden haul. Quick pickling means you don’t need to invest in proper canning technique and can enjoy your creation sooner. Store in the fridge for weeks, the flavor will intensify with time. I originally developed this recipe for this stuffed sweet potato with freekeh and mint. You could also use pickled radishes on crackers, bruschetta, over pasta or rice or on top of salads.

Ingredients:

1 Bunch Radishes
1/3 cup Apple Cider Vinegar
1 1/2 cup Water
1 Tbs. Molasses
2 tsp. Garlic Powder
2 tsp. Thyme
2 tsp. Dill
Salt and Pepper

Instructions:

Slice radishes thinly. Add water, vinegar, molasses to a large pot and bring to a boil on the stove. Add radishes to the pot and let them boil for 5-7 minutes until desired tenderness. I like it a little al dante. Turn off heat, allow to cool. Pour into mason jar. Store in fridge for a few weeks. The longer you wait, the more pickley they become.
